I use DVD Audio Extractor. I bought it years ago & it rips the audio in loads of formats. Theoretically, VLC can do it. More info here.
You can do it with Audacity too (video here) but you need to make sure the FFMPG plugin is installed. I've never used Audacity to do it, so I have no experience there.
One thing to be wary of is what format the audio track is in on the DVD. Most commercial DVDs (& a lot of home made discs) use mpg or dolby digital (AC3) encoding & so the audio is lossy to begin with. Some discs come with LPCM audio tracks & those are the lossless ones to rip. But it sounds like you've ripped audio in the past, so you prolly already know all that
