My cupboards are virtually empty, so right now I’m enjoying a can of rainforest-brand tuna straight from the can and a slice of slightly freezer-burnt zucchini bread made a few months ago, anyone jealous ????

I found fresh sea bass in the supermarket today. Pan seared it with white wine & chilli sauce.

It was lovely. Living in a land locked country, I don't get much sea fish. I filleted it myself too. Haven't done that in a while. The sauce was my own creation. It was supposed to have parsley instead of chillies. But I don't much like parsley. Got 3 red chillies, chopped them & stirred them into the sauce instead. Not too spicy but just enough to give it a bit of a zing Basically you coat the fillets in flour seasoned with salt & pepper, sear them in a skillet with olive oil, take them out. Then lob a couple of cloves of chopped garlic, the chillies*, a glass of white wine, juice from half a lemon into the same pan. It'll de-glaze the pan. Sprinkle in a little flour & a knob of butter to thicken it & then drizzle it onto the fish.
*You can substitute for fresh parsley if you prefer. (or use both).

I just popped a freshly-made lasagna into the oven, and now it’s time to make a Caesar salad with extra garlic! I cannot wait to dive into this garlicky, cheesy feast.
